Smoked Cinnamon Rolls with Bacon Topping

  • 4 cups flour or more if needed
  • 2 ¼ tsp instant yeast
  • ½ cup sugar
  • 1 tsp salt
  • ½ cup softened butter
  • 3 eggs
  • 1 cup warm water


  • ½ cup softened butter
  • ½ cup brown sugar
  • 1 tbs cinnamon


  • 2 cups powdered sugar
  • ¼ cup heavy whipping cream
  • 1 tbs vanilla


Make the Dough

  • Using a stand mixer, combine flour, yeast, sugar, and salt.
  • Mix in butter until well incorporated.
  • Add eggs and mix to combine.
  • Pour in warm water and continue mixing until dough is formed. Add more flour if needed. You do not want the dough to be super sticky.
  • Cover with a towel and let rise for 15 minutes.
  • Combine all filling ingredients in a small bowl using a spoon.


  • Use a rolling pin or glass to roll out the dough on a floured surface. You want a consistent thickness around 1/2 inch.
  • Spread the filling mixture onto the dough. Make sure you go all the way to the edges.
  • Roll up the dough into a log.
  • Slice the log to create individual rolls. I made 12, but you can go bigger or smaller to create the amount you want.
  • Place the rolls on a cookie sheet.
  • Preheat your smoker and set the temperature to 350 degrees.
  • Cook at 350°F for 45 minutes until golden brown.
  • Combine all glaze ingredients in a small bowl.
  • Drizzle on rolls and top with diced bacon.
  • Enjoy!
