Grilled Squash and Zucchini
Grilled squash and zucchini is a quick, easy and tasty side dish that pairs well with various mains. Steak, chicken, fish, you name it. The slices are even nice additions to sandwiches, flatbreads, and pizzas. In this recipe, the squash and zucchini are brushed with a garlicky oil and balsamic mixture and finished with basil.

Ingredients
- 8 ounces yellow squash
- 8 ounces zucchini
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 2 garlic cloves, grated
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- ¼ cup chopped fresh basil, for garnish
Instructions
- Preheat your Z-Grills (preferably with branded wood pellets) or other wood pellet grill to 400 degrees Fahrenheit.
- Cut the ends off each squash and zucchini, then cut lengthwise into ½-inch thick planks.
- Whisk the oil, balsamic vinegar, garlic, salt, and pepper together in a small bowl.
- Brush each plank with this mixture, then transfer them to the grill.
- Close the lid and cook for 3-4 minutes.
- Uncover, flip the planks, and cook for 3-4 more minutes.
- Plate, garnish with basil, brush with any remaining oil and balsamic mixture and enjoy.
Notes
If you don’t have basil, use any fresh herb you have on hand.
