Double Smoked Coffee Rubbed Ham
Double smoking a ham is a fantastic way to enhance its flavor and add a personal touch to your holiday feast.

- 1 Z Grills 10502B Gen 2
- Z Grills Competition Blend Pellets
Ingredients
- 1 smoked spiral ham
- 1/2 cup maxwell house coffee
- 1 can pineapple rings
- 1 cup brown sugar
- honey optional
Coffee Rub: Mix together 1/2 maxwell house coffee and 1 cup brown sugar.
Mop sauce: 1 can pineapple slices or chunks, 1 cup brown sugar blend well.
Instructions
- Unpack your ham and dry it off
- Place in a tin on a rack..
- Apply your coffee rub mixture all over the ham. If you have some left over just disregard it.
- You want the coffee mixture to fall in the tin.
- Let rest so the ham comes up to room temperature
- Preheat your Z GRILLS 275f
- Once you hit 275 put your ham in and heat it to 120f (approximately 5 hours)
- You can speed the process along after hour 3 by adding 1/2 cup water and loosely wrapping with foil..
- Once 120 is reached, turn the pit up to 450f and start mopping. Mop until you are happy with the color. Also a good eating temperature for the ham is 140f.
- Once 140 is hit remove and baste with some of that sauce on the bottom of the tin.
