Ingredients
Sausage (sweet or hot)

Onion

Different color peppers
Olive oil
Kosher salt

Nice rolls of your choice
Instructions
Slice onions and peppers
Add a touch of oil to the onions and peppers
Apply some salt and pepper to the onions and peppers
Add your sausage and onion and peppers to trays
Set your z grills @250f
Smoke for 1 hour or until and internal temp of 135-145f is reached
After 1 hour remove the sausage and peppers and onions
Once removed turn the temperatureĀ up to 400f-450f for high heat searing
Add the sausage directly to your bottom grates and cook for 10 min 165f+
Add onions peppers to re heat up
Remove and make up some smoky sausage and pepper sandwiches!
