Smoked Pork Ribs with Blueberry BBQ Sauce

These smoked pork ribs are a crowd-pleasing dish that are perfect for summer BBQs or any time you're craving delicious, tender meat. The secret to making perfect ribs is low and slow smoking, and this recipe is designed to give you fall-off-the-bone tender pork ribs every time.

Ingredients

  • 1 Rack of Saint Louis Ribs

The Rub

  • 1/4 cup brown sugar
  • 3 teaspoons kosher salt
  • 3 teaspoons black pepper
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Blueberry BBQ Bourbon Sauce

  • 1 pint of fresh blueberries picked over
  • 1/2 cup Jim Beam or any Bourbon
  • 1/4 1/2 cup ketchup
  • 1/2 cup bourbon
  • 1 small red onion diced
  • 3-4 cloves garlic minced
  • 1 jalapeño diced
  • 1 teaspoon crushed red pepper

Instructions

  • Preheat your smoker to 250°F.
  • In a small bowl, combine the brown sugar, paprika, garlic powder, onion powder, salt, and black pepper to make a dry rub.
  • Remove the membrane from the back of the ribs and apply the dry rub generously on both sides.
  • Place the ribs on the smoker, bone side down, and smoke for 2 hours.
  • After 2 hours, wrap the ribs in aluminum foil and continue to smoke for an additional 4 hours or until the internal temperature of the ribs reaches 195-200°F.
  • Remove the ribs from the smoker and let them rest for 10-15 minutes.
  • If desired, brush the ribs with Blueberry BBQ Bourbon sauce and place them back on the smoker for a few minutes to caramelize the sauce.
  • Slice the ribs and serve immediately.
