Stuffed Pork Loin

Ingredients
- 5-6 lb pork loin
- 1-2 tablespoon shallot diced
- 1 med onion diced
- 8 oz semi crushed walnut
- 1/4 stick butter
- 2 cups fresh spinach
- your favorite rub
Instructions
- Butterflying a pork loin is a technique that involves making a cut through the center of the roast and then opening it up like a book. At that point make another 2 cuts on each side of the center cut being careful not to cut all the way through.
- Saute 1 lb maple bacon. Remove to a paper lined plate to drain.
- Drain 95% of the bacon grease-
- Add in 1-2 tablespoon shallot(diced) and cook for 1-2 minutes.
- Once cooked add in 1 diced medium onion.
- Cook for another 2 minutes.
- Add in 8oz of crushed walnuts
- The walnuts do not have to be perfectly crushed. Doing so with a large freezer bag works well.
- Saute another few minutes and add in 1/4 stick butter. Once melted, remove to a bowl to cool.
- Once cooled add in the mixture to the butterflied pork loin topped by 2 cups fresh spinach..
- Roll the pork loin and tie with butcher's twine.
- Add rolled Pork Loin to a backing sheet and cook 425f for 15 minutes. After that 15 minutes lower the temp to 375 and cook till 145 internal is reached.
- Let rest 15 minutes, slice and enjoy!
