Rub all sides of the chuck and allow to sit at room temperature for up to 45 minutes
Fire up your Z Grills pellet grill and set that temp at 275f
Once your pellet grill hits 275f, you can get the Chuck in... Center or top rack and add a tin underneath!
At hour number two you can spritz it with water or 50/50 water or ACV
At the 3 hour mark take a hand held temp reading. By now you should be in the stall at around 160f..
Remove and slice up 1/2 onion, add one teaspoon better than bouillon beef base. 1/2 cup water...Add the chuck to a small rack in the tin and wrap tight with foil.
Return to the pit and continue running 275f till tooth pick tender or around 200f internal.
Once you hit around 200f or toothpick tender carefully remove the foil(steam).total cook time 4 hours!
