Ingredients
1Rotisserie Chicken
1Red Onion
Gouda Cheese(sliced)
Pepper Jack Cheese (Shredded)
Your favorite BBQ SAUCE
Melted Butter
Everything bagel seasoning
S&P&G
Instructions
Unpack your chicken and dry it off
Spatchcock the chicken, then cut in half(Texas Style)
Slice 1/2 Red Onion per chicken
Season the chicken on all sides, then put on a wire rack in the fridge for 2-3 hours.
Once that 2-3 hours have passed.
Preheat your Z GRILLS 300f-325f
Add in the chicken at approximately 1 1/2 hours your bird should be around 135f. Check it and make sure it's cooking evenly.
Smoke till 165f breast is reached. Dark meat should be 185f..
Approximately 2.3 hours
At 165f remove the chicken from yuor Z as its time to remove the meat from the bones. Be careful that no small bones are added. I used 95% white meat in this recipe.
Once the meat is removed you want to chop it into bite size pieces. At that point add to a bowl and add in some BBQ sauce. I used a 9x13 oven or grill safe dish. Add in your bottom slider rolls.
Add to that your Gouda Cheese,
Add your chopped chick
Add your red onion
Add some more cheese
Add some BBQ sauce
Add your crown or top bun
Brush with melted butter
Sprinkle everything with bagel seasoning.
Cover with foil and add back to the pit at 400f..
Cook until finished, about 10 minutes.
Remove foil and serve
