Wrap the scallops in the bacon and secure with a skewer (for a main) or individually with a toothpick. Note: soak the skewers before using to stop them burning on the grill
Brush the scallops with the melted butter and garlic
Sprinkle with a little (!) salt and some black pepper
Place the prepared scallops directly on the grill grate, drop the temperature to 300F, and cook for 12-15 minutes
Flip the skewers and give the scallops another 12-15 minutes
At the end of the cooking time, the temperature probe should be showing 145F and the scallops cooked to perfection
