Ingredients

  • 2 lbs skirt steak
  • 1 tsp salt
  • 1 tsp black pepper
  • cooking oil

Instructions

  • Prepare the steak. Pat the beef dry with paper towels and season it generously with salt and pepper. Then, allow the skirt steak to rest at room temperature for 15 minutes.
  • Then, prepare your grill. Preheat your Z Grill pellet smoker to medium-high heat, about 350-400 °F. Oil the grill grates.
  • Rub a light coat of oil over your skirt steaks before placing them directly on the grill grates.
  • Cook each skirt steak for about 2-3 minutes on each side. A deep crust should form on both sides of the steak.
  • After 4-6 minutes total, remove the skirt steaks from the grill. Let them rest for 10 minutes before slicing and serving.

Notes

The USDA recommends that beef reach an internal temperature of 145°F for food safety. However, it’s common for people to eat steaks under that threshold. Here’s a temperature and doneness guide for cooking steak:
  • Rare: 125°F
  • Medium-rare: 135°F
  • Medium: 145°F
  • Medium-well: 155°F
  • Well-done: 165°F
