Apple Pie with Graham Cracker Crust

Instead of a traditional pie crust, this recipe features a buttery graham cracker crust that adds a toasty flavor and crunchy texture to each bite.

Ingredients

Crust

  • 1 teaspoon vegetable oil
  • 2 teaspoons all-purpose flour
  • 1 ½ cups graham cracker crumbs
  • 6 tablespoons unsalted butter melted
  • ¼ cup granulated sugar
  • ¼ teaspoon fine sea salt
  • 1 egg white beaten

Crumble

  • ½ cup all-purpose flour
  • ½ cup light brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon fine sea salt
  • 1/8 teaspoon ground nutmeg
  • 4 tablespoons unsalted butter softened

Pie Filling

  • 3 pounds granny smith apples peeled and cored
  • 2 teaspoons fresh lemon juice
  • 5 tablespoons unsalted butter softened
  • ½ cup granulated sugar
  • ½ cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon fine sea salt
  • ¼ cup all-purpose flour

Instructions

  • Preheat your Z-Grills (preferably with branded wood pellets) or other wood pellet grill to 350 degrees Fahrenheit.
  • Lightly brush a 9-inch pie pan with oil, then lightly dust with flour. Shake out any excess.
  • Combine the remaining crust ingredients, except for the egg white, in a mixing bowl until it reaches the consistency of wet sand.
  • Transfer the crust mixture to the prepared pan and firmly press into the bottom and up the sides. Pop it into the freezer to set.
  • Lightly brush the crust with the egg white, then transfer to the grates, close the lid, and cook for 10 minutes or until the crust is lightly browned. Check periodically to prevent overcooking.
  • Meanwhile, add the topping ingredients to a bowl and mix with clean hands. Use a squeezing/pinching motion until the mixture resembles coarse crumbs.
  • Refrigerate the topping until you are ready to top the apple pie.
  • Cut the apples into 1-inch cubes and toss in lemon juice. Set aside.
  • Add the butter to a large cast iron skillet and transfer to the pellet grill. Close the lid and leave for a minute or until melted.
  • Add the apples, both types of sugar, and spices. Stir, then return the skillet to the pellet grill.
  • Close the lid and cook for 5 minutes or until the apples start to sizzle and release their juices.
  • Remove from the pellet grill and stir in the vanilla extract, salt, and flour. Stir until the flour fully absorbs. Set the filling aside to cool for 10 minutes.
  • Transfer the apple filling to the prepared crust, sprinkle the crumble topping in an even layer over the apples, and place it into the pellet grill.
  • Close the lid and cook for 35-40 minutes or until the apple pie with graham cracker crust is golden and bubbly.
  • Remove the pie from the grates, cool for 1 hour, then slice and serve.

Notes

You will need about 12 sheets of graham crackers to make the crust.
